    When buying oils they should be fresh and in small quantities. NEVER heat oils at high temperatures! Store them in dark glass containers as light, heat and air break them down. Oils such as olive oil and sesame oils are resistant to oxidation and are okay to use for sauteeing. Always put as much water as oil in the fry pan when sauteeing. This helps to keep the temperature down. NEVER heat flax seed oil.
